Orange Jam....

My neighbours generously gave me a huge basket of freshly picked oranges today when we meet for lunch....
Mind you they gave me twice as many as this last week which I haven't done anything with as of yet... Feeling guilty about my over supply of oranges, when I got home this afternoon I set to work turning some of them into something other than just 'oranges'....
20 were tuned into Orange Jam. The recipe I used is from here and it's great!!! I doubled all ingredients but only added 1/2 a cup of the orange rind, I don't really go for that rindy marmalade taste....
40 were juiced and produced 4 litres of lovely yummy fresh o.j....
Now there's only about 160 left, waiting in the cool-room for me to do something with over the weekend... Any suggestions???? I was thinking maybe cordial, or there's always more o.j...???

I tried offering them to the neighbour but they don't like oranges or any products associated with them, funny that.... LOL!!! Take Care :)

    Orange and oregano salad

    3 lg navel oranges
    4 sprigs fresh oregano leaves, chopped
    1/4 red onion, thinly sliced
    generous amt. extra virgin olive oil
    2 Tablespoons red wine vinegar
    salt and pepper.

    Remove skin and pith from oranges. Slice into 1/4-inch thick disks. Arrange on serving platter and sprinkle with oregano and onions. Dress with oil, vinegar, salt and pepper. Serves 4

    I've never heard of orange cordial, but it does sound very interesting.
    You probably already know you can freeze the juice and use it whenever you wish.

  4. It must be wonderful to have a cool room - I guess it is essential in your part of the country. That is a serious supply of oranges. Juices and cordials probably use up the most oranges. I love orange cakes but they only need 1-2 orangs which won't make much of a dent in your supply.

  5. Pity we dont live closer Jodie as I would have loved some of the jam and oj. You have very lovely friends to give you such nice oranges. Can you use them in a cake perhaps.

  7. Hey Jodie, I guess noone will be getting scurvey at your place. Last year I made an amazing orange cake. I boiled the oranges and mushed them up and it had almond meal instead of flour. It was really moist and delicious.

  8. Oh Orange jam sounds so Yum to me!! I have been thinking home made jam to slather on my home made bread ( One thing at a time Tammy! ) I can only suggest that OJ freezes well and comes in handy for cakes, and fruit smoothies in its frozen form here in our house.

  9. Candied orange rinds maybe??? Your jam looks wonderful. Maybe you should just eat oranges for breakfast, lunch and dinner until they're gone. ;-)

  10. Juice them and freeze in managable portions. Then you can make orange cake or defrost for some juice when you want to. dh juices and freezes lemons when we get given them, as he doesn't drink water with out some lemon in it! He actually freezes it in a big hunk, not my choice, and chips off a bit for lemon ice water.
    The jam looks fantastic, well done for making good use of the oranges!
