Recipe Swap...

Last month Randi over at I have to say came up with a great idea to do an online recipe swap... She's given this month a theme - Money Saving Recipes....

I love this theme!!! I'm always creating meals out of nothing, trying to stretch the budget as far as I can without feeding the family on bread and water... LOL!!!

Here's my money saving recipe....
Salmon Mornay Pasta Bake...

Ingredients:
2 Tablespoons of Butter
1-2 Tablespoons of Plain Flour
1 Onion Chopped
1 200g Tin of Pink Salmon (you could also use tuna)
1/4 Cup of Cream
1-2 Tomatoes Chopped
1/4 Cup Freshly Chopped Parsley
1 Cup of Fresh Bread Crumbs
1 Cup of Grated Cheese (I use a combination of cheddar and Parmesan but you could use any cheese you like)
1/4 Cup of Grated Cheese (Extra)
2 Tablespoons of Lemon Juice
Salt and Pepper to Season
250g of pasta (I used spiral)

Melt butter over medium heat. Stir in chopped onions and saute. Stir in flour and cook for 1 minute. Add cream making sure to stir well so that lumps don't form and cook for 1 minute. This is the base of your mornay sauce.

Add the tinned salmon to mornay mixture, juice and all. Add chopped tomatoes, parsley, cheese's, lemon juice, salt and pepper. Stir well to break up the salmon chunks. Cook over high heat for 5 minutes. Set aside.

Cook pasta in salted water until just cooked. Drain pasta once cooked saving 1/2 a cup of the water. Return pasta to the pot you cooked it in, add the salmon mornay you prepared earlier and mix together well.

Poor the pasta/mornay mixture into a baking dish. Top with combined bread crumbs and extra grated cheese. Bake in a hot oven until top is golden and crispy. Serve with a green salad and crusty bread.... YUMMY!!!

I popped by the local op-shop on Wednesday afternoon and picked up this gorgeous fabric...


There's just under 3 metres of it and you won't believe how much I scored it for..... $0.50 cents, yes that's right, 50 cents for the whole lot... Talk about a BARGAIN!!!!

I must admit I'm a bit hooked on dish/wash cloths at the moment. With my little sisters b'day coming up I wanted to create her something that she'd absolutely love. It had to be original, she's not a production line kinda girl, so I put my thinking cap on and thought that a couple of funky wash cloths teamed up with some delicious handmade soup would be right up her alley.

I'm one wash cloth down and have casted on the second... I know that she reads this blog often so you'll all have to wait for a couple of week before the big reveal... Sit tight, I promise it'll be worth it... :)

  8. looks good, I love the pvc bag you made, I have done a few of those, how did you like turning it with the plastic? That is my least favourite part!!
    Good op shop finds, i have a blog to do about my recent ones as well, so much treasure out there!!

  14. My Mum used to make a mornay just like that one when I was a kid! Do you mind if I ask what yarn you are making your wash/dishcloths out of? I made my first ever one yesterday but couldn't find any organic cotton or similar at Spotlight so used a yarn made of corn fibre. It feels nice and soft but I need to test it our before I make anymore. Lisa
